Harvest of seaweed is an annual event in most cultivated sites, characterised by high harvest mass in a short period. In Greenland, two seaweed species are cultivated, and the annual harvest period depends on the ocean's temperature. Usually, the harvest is in the middle of June, and the process of seaweed process is traditionally by drying, freezing or fermentation.
Aim:
This project aims to elucidate the microbial hazards involved in different drying methods of brown seaweed (kelp), using the two main cultivated seaweeds in the Northern Atlantic Ocean (Saccharina latissima and Alaria esculenta).
Content:
The project will take place in June 2021 and involves fieldwork in Greenland (DTU covers travel costs). Followed up analysed would take place at DTU Food in Kgs. Lyngby. The project would investigate the shelf-life of the seaweed before other processing methods. Building on knowledge from 2020, different washing, holding or blanching methods would be used, and the microbial quality of the seaweed would be correlated to the water quality and treatment. Various drying methods would be examined after the pre-treatment to determine these different drying technics' microbial hazards.
A successful project would help the fastest-growing food segment (Seaweed) stabilise and diversify post-harvest treatment to reduce food losses. Seaweed is a sustainable food crop that does not need feeding or other nutrients compared to aquaculture of fish. Compared to terrestrial plants, the seaweed would not require additional land or fresh water, which are both limited resources.
The expectation of the student includes; able to conduct fieldwork in June 2021 and an interest in food microbiology. Laboratory skills would be taught before the fieldwork.
