Project Overview:
The SKUMBAR (Scientific Key Understanding of Milk for Barista and Aerated Recipes) project is an innovative research initiative that aims to link milk composition, foam functionality, and barista quality. As a student, you'll delve into the physical processes and molecular interactions that transform milk into high quality barista coffee with creamy foam.

Transforming milk to high quality barista coffee with a creamy foam involves a range of physical processes, molecular interactions and most importantly generation of an air-in-water emulsion. This drives an increased scientific focus on detailed characterization of dairy foam functionality and utilization of specialized methods.

Extent and type of project; 45 or 60 ECTS - MSc project

Main subject area; Food chemistry and physics

What You'll Do:

  • Utilize advanced analytical techniques such as chromatography, electrophoresis, mass
  • spectrometry (MS), rheology, and foam quantification to characterize milk foam structure and
  • stability.
  • Apply application testing to connect analytical data with consumer experiences.
  • Conduct research at both the Arla Innovation Centre and the Department of Food Science,
  • benefiting from the diverse techniques and expertise at these locations.
  • Engage with the Arla Pro team, gaining insights into delivering high-performing barista products to professionals worldwide.

Who We Are Looking For:
We are seeking a student with a background in food science, molecular biology, or related fields. Experience as a barista, whether professionally or at home, is a plus.
